Low Carb Diet: Feta Bake

I decided to do low carbs for Lent.  I know this diet is pretty controversial

especially from a scientist's perspective

, but I like it because  it's a guaranteed way to lose weight...you just have to make sure you don't lose your mind! I plan to drop a few pounds and then stabilize with healthy eating, portion control, and exercise.  I also decided to research some low carb recipes in order not to be relegated to a life of grilled chicken and green veggies.  I made feta bake from a recipe adapted from the Winsor Low-Carb Cookbook.  It turned out amazing!  I'm actually looking forward to more low carb yumminess. Scroll down for the recipe :-).

Ingredients:

2 mini sweet peppers

6 ounces of frozen spinach

4 eggs

4 ounces of crumbled feta cheese

1/2 teaspoon minced garlic

sprinkle of garlic salt and pepper

Add 1/4 cup of water to spinach, boil until thawed, and drain. Dice and saute peppers.  Preheat oven to 350 degrees Fahrenheit.  Beat eggs, garlic, and seasonings.  Add spinach, peppers, and feta.  Pour into a greased baking dish, bake for 20 minutes, and enjoy!
