Low Carb Diet: Spaghetti Squash

I'm nearly 2 weeks into my low carb diet!  Everyday is a challenge, but there are also some great rewards.  The weight has been consistently dropping.  I've dropped a digit in the tens category (as in ones, tens, hundreds...) which I'm super excited about!  I've also been getting a little more creative with cooking.  I made spaghetti for Sunday dinner, which is one my staples.  To make it low carb friendly, I used spaghetti squash.  It was yummy!  My daughter, who still at 15 isn't very fond of veggies, even thought so.  It's super easy to make

Ingredients:

1 spaghetti squash

1 lb. ground turkey

spaghetti sauce

2 tsp. olive oil

sprinkle of garlic salt and pepper

Cooking instructions:

Preheat oven to 450 degrees Fahrenheit. Carefully cut spaghetti squash in half (requires sharp knife). Use spoon to remove stringy stuff and seeds.  Rub olive oil inside, sprinkle with garlic salt & pepper, and bake uncovered 30-40 minutes.  Brown ground turkey, season as desired, and add spaghetti sauce.  After 30-40 minutes, remove squash from oven and use a fork to pull apart the inside layers (spaghetti).
